Watermelon gazpacho with hemp oil
This is a delicious raw summer soup, a blend of accessible garden veggies with watermelon and not so known superfoods: hemp oil and hemp seeds. Hemp products contain omega 3 and 6, thus are to be consumed raw. More about benefits of hemp products here.

For this recipe, that serves 4, you will need:
INGREDIENTS:
2 peeled beets
1 zucchini (not peeled)
1 carrot
1 small red onion
2-3 large slices of watermelon (you can also use up watermelon that you dislike due to lack of sweetness)
Fresh parsley
Black pepper
Salt (alternatively you may use 1-2 teaspoons of tamari sauce)
3-4 spoons of hemp oil (olive oil can be used if you still have not bought hemp oil)
1/2 lemon juice (or less depending on your taste, alternatively use apple vinegar)
For a special twist, you might add lemon thyme.
Cut all veggies in pieces (size depends on your blender power), and blend all in a blender until smooth. Sprinkle with hemp seeds and add a dash of hemp oil. Decorate with herbs or edible flowers.
